10 Medium corn tortillas
5 Cups (1.25 Lt) or so of Tex-Mex Chipotle Chicken Filling
3 Cups ( 750 mL ) or so of salsa
2 cups ( 500 mL ) of grated cheddar, Monterey Jack or taco blend cheese

Directions:

Preheat the oven to 375ºF (190ºC ). Turn on your convection fan if you have one.

Lay the tortillas on your work surface, spoon 1/2 cup (125mL) or so of Tex-Mex filling down the middle of each tortilla. Roll up tightly and arrange in a 13 x 9 Inch baking pan, neatly filling it in. Spoon the salsa evenly over the tops an sprinkle evenly with the cheese. Bake until heated through and lightly browned, 30 minutes or so . serve with a margarita or two!
