1/2 cup grated cheese
2 eggs
2/3 cup bread crumbs
salt pepper and Italian Seasoning
1 breast of veal pocket roast

Directions:

ēDefrost spinach and cook for 5 minutes.Drain
Beat eggs and cheese together with salt and pepper.
Add spinach, breadcrumbs and Italian Seasoning
To moisten use bouillon and stuff veal roast
Put into roasting pan with some olive oil coat the roast with olive oil and salt and pepper.
Roast about 1 hour at 350

Mom always called this sema. I looked it up in an Italian dictionary and it means "heavenly" very appropriate for this wonderful dish.
The most difficult thing is to find a breast of veal pocket
Recently I took two pork tenderloin and butterfly cut them put the stuffing on one and covering with the other,tying with string. roast for 1 hour at 325. A tasty alternative ot the veal!
