2 c. Cup 4 Cup gluten free flour
6 T. natural cane sugar
2 T. aluminum free baking powder
1/4 tsp. salt
2 c. unsweetened soy milk
2 c. blueberries
Directions:
Directions:
Whisk together flour, sugar, baking powder and salt in a large bowl. Slowly whisk in soy milk, adding more, if necessary, for a smooth spreadable batter. Coat a large skillet or griddle with cooking spray or oil and heat over medium heat. Scoop 1/4 cup batter into hot pan, and sprinkle with 1-2 T. blueberries. Cook 3-4 minutes, or until batter begins to bubble and edges start to brown. Flip and cook 2-3 minutes more, until cooked through and nicely browned. Repeat.

This is now my basic go-to pancake recipe. I've made this with all purpose flour and gluten free substitutes such as: spelt, rice, the Cup 4 Cup mentioned above and combinations of all of these. Milk substitutes can be almond, coconut and regular milk varieties. Every time a winner. A great tip is to make up the dry ingredients and put in a glass storage jar. Use by adding your choice of milk and blueberries when cooking. Great if you're having house guests as it makes breakfast preparation a snap. The recipe is from The White Pig Bed & Breakfast and Animal Sanctuary in Schuyler, Va.
