1 ham bone
8 c. water (approximately)

1 c. onion
1 c. celery
2 c. dried green split peas
1 tsp. thyme
pinch cayenne pepper
salt (to taste)
leftover ham cut in chunks

Directions:
Directions:
Place ham bone in a large pot and add water to cover. Bring to a boil and then simmer for at least 2 hours. Take out bone.

Add onion, celery, and split peas. Stir in thyme and cayenne pepper. Simmer all day, adding additional water if necessary (but remember it is supposed to be thick). Add salt if necessary.

Add leftover ham chunks about 30 minutes before serving.

Oma always served these with biscuits, but we were only allowed one biscuit for each bowl of soup. I still feel like something is missing if I don't have a biscuit with my bowl.
