4 lrg potatoes
12 slices bacon
1/2 cp butter
2/3 cp flour
6 cps milk
3 bunches green onion, chopped
3/4 tsp salt
1/2 tsp pepper
2 cps shredded Cheddar cheese
8 oz sour cream

Directions:
Directions:
Bake potatoes 1 hr in a 350* oven. Scoop out the insides of the potatoes and set aside. Discard the skins.

Cut up the slices of bacon and fry until crispy. Scoop out the bacon and drain on a paper towel. Remove all but about 4 Tbls of bacon fat from the pan. Add the butter and melt it with the bacon fat. Stir in the flour to make a roux. Cook about 1 min, stirring constantly. Gradually pour in the milk while stirring until all the milk has been added. Bring heat to med and keep stirring until it starts to thicken.

Add the potatoes, green onion, salt, pepper, bacon pieces and cheese. Stir well and continue to heat for about 15 min, allowing the flavors to blend and the base to thicken up more. Just before serving stir in the sour cream until well blended. Serve immediately.
