1 loaf crusty bread
1 pint cherry tomatoes, halved
1 English cucumber, halved lengthwise, seeded and thinly sliced
1/4 red onion thinly sliced
25 basil leaves, chiffonade
1/4 cup olive oil
1 tablespoon red wine vinegar
salt and pepper to taste

1. Cut bread into 1 inch cubes, place on baking sheet drizzle with olive oil and toast for 20 minutes in 275º oven.

2. After bread cools, place in a bowl. add, tomatoes, cucumver, onion and basil.

3. In a jar mix together oil and vinegar. Shake for 30 seconds. Pour over salad and let sit for 1 hour before serving
