1 cup all-purpose flour
2 eggs
1 cup whole or low-fat milk
3/4 tbsp minced chives
2 tsps. minced fresh rosemary (1 tsp dried)
3/4 tsp kosher salt
3/4 tbsp unsalted butter (1/4 tsp per muffin)
1.5 tbsp vegetable oil (1/2 tsp per muffin)

Using food processor or blender, combine flour, eggs, milk, chives, rosemary and salt. Mix well so that mixture is smooth. Place in small mixing bowl and refrigerate, covered for at least 45 mins.

Preheat oven to 425 ºF.

Place butter (1/4 tsp) and oil (1/2 tsp) in muffin tins (9). Melt for 3-4 minutes. Immediately add chilled, whisked batter and bake for 18-20 minutes under pudding rises and becomes golden brown.

2/3 full or 1/4 cup in each tin

Remove from oven.
