1/2 c. butter
2/3 c. granulated white sugar
2 eggs
1 c. buttermilk
1/2 t. baking soda
1 c. cornmeal
1 c. all-purpose flour
1/2 t. salt

Directions:
Directions:
1. Preheat oven to 375º and spray 8" x 8" square pan.
2. Melt butter in large skillet. Remove from heat and stir in sugar. Quickly add eggs and beat until well blended. Combine buttermilk with baking soda and stir into mixture in pan. Stir in cornmeal, flour and salt until well blended and few lumps remain. Pour batter into prepared pan.
3. Bake in preheated oven for 30 to 40 mins, or until toothpick inserted in the center comes out clean. Only goes as high as 40 mins if your using wheat flour, over wise it will get dry!
4. Of course my favorite way to cook my corn bread is in a hot iron iron skillet which will cut your cooking time to 25 mins and make your cornbread gold brown and crisp around the edges. If you want the real Mexican experience add some green chiles and sharp cheddar cheese and dance around the kitchen with Kacy until it is finished!
