1/2 cup chopped onion
1/2 cup sliced celery
2 tblsps. butter
1 cup chicken broth
1 cup beef broth
2 tblsps. cornstarch
3/4 c. sauerkraut, rinsed and drained
2 cups light cream
2 cups chopped cooked corned beef
1 cup shredded Swiss Cheese

Directions:
Directions:
Heat butter over medium heat in large pot. Saute onion and celery. Add broths. Mix cornstarch with some of broth. Add to pot and cook 2 minutes, stirring constantly. Add sauerkraut, cream, corned beef. Simmer and stir occasionally for about 15 minutes. Add Swiss Cheese and stir until melted. Serve with salt, pepper and Rye croutons.
