2 T. butter
2 T. flour
1/4 tsp. salt
1/8 tsp. pepper
1 c. milk

Directions:
Directions:
Melt butter over low heat in a heavy saucepan. (Wooden spoon for stirring is a must.) Blend in flour and seasonings. Cook over low heat, stirring until mixture is smooth and bubbly. Remove from heat. Stir in milk. Bring to a boil, stirring constantly. Boil 1 minute.

For THIN sauce, reduce butter and flour to 1 tablespoon each. Everything else remains the same.
For THICK sauce, increase butter and flour to 1/4 cup each. Everything else remains the same.
