5 lb. potatoes
1 c. sugar
1 T. all-purpose flour
1 tsp. salt
1/2 tsp. ground mustard
1/4 tsp. pepper
3/4 c. vinegar
1/4 c. water
3 eggs, lightly beaten
1 c. green onions, thinly sliced
1 c. celery (optional), chopped
1 c. green pepper (optional), chopped
3/4 c. pickle relish (optional)
mayonnaise

Directions:

Cook diced potatoes in boiling water until tender; drain and cool. Meanwhile, in a saucepan, combine sugar, flour, salt, mustard, and pepper. Add vinegar and water; bring to a boil. Boil and stir for 2 minutes. Add a small amount to eggs; return all to the pan. Cook and stir for 1 1/2 to 2 minutes or until mixture is thickened and a thermometer reads 160º. Refrigerate until cooled. Put potatoes in a large bowl. Add onions, celery, and any of the optional ingredients you choose to use. Pour dressing over potato mixture and toss to coat. If desired, add mayonnaise to make creamier.
