4 ripe bananas
juice from ½ a lemon
4 oz butter
4 oz brown sugar
pinch of cinnamon & nutmeg
½ c orange juice
4 T rum
¼ pint whipping cream, whipped (or vanilla ice cream)
2 T chopped pecans (optional)

Directions:

Cut bananas lengthwise & sprinkle with lemon juice. Melt butter in a frying pan. Add brown sugar, cinnamon, nutmeg & OJ. Stir over gentle heat until dissolves into a syrup. Add bananas. Don't turn them, just baste often with the syrup for about 3 minutes. Heat rum in a small sauce pan & ignite with a match. Pour over bananas & shake pan until flame dies down naturally. Place 2 banana halves on serving plate. Top with whipped cream or ice cream. Sprinkle with pecans if desired.
