2 c Persimmon pulp (wild are best if you can find them)
3 eggs (beaten)
1 ¼ c sugar (I mix half white/half light brown)
1 c all purpose flour
1 tsp double acting baking powder
1 tsp baking soda
½ tsp salt
½ c melted butter
2 ½ c light cream
2 tsp cinnamon
1 tsp ginger
½ tsp nutmeg
1 c raisins (optional, but better with)

Preheat oven to 350º. Combine everything together. Bake in a 9x9 baking dish about 1 hour or until firm. Serve with cream or hard sauce.

Don's Granny used to make this. I surprised him on our first Thanksgiving dinner at our house by making it. I thought he was going to cry he was so happy. I was more worried about not having a dry chicken.
