3 T flour
½ tsp salt
¼ tsp pepper
4 skinless boneless chicken breasts
2 T olive oil
1 medium onion, chopped (I like Vidalia)
1 T butter
1 c chicken broth
3 T lemon juice
½ tsp thyme
lemon wedges (optional)
2 T parsley (optional)

Directions:
Directions:
Combine flour, salt, & pepper in a Ziploc and shake chicken to coat. Note, KEEP RESERVED FLOUR!
In skillet brown chicken in the olive oil (about 5 min/side). Set chicken aside.
Melt butter in a pan and add onion. Cook until softened (2-3 min). Add reserved flour, stirring until completely incorporated. Add broth, 2 T lemon juice & thyme. Bring to a boil, stirring constantly. Return chicken to skillet & reduce to medium low. Cook covered another 5 minutes. Serve chicken. Add 1 T lemon juice to sauce and pour over the chicken. Lemon wedges and parsley for decoration.
