3 tbsp. Butter
1 small onion, finely chopped
1-1/2 cups sliced mushrooms (optional)
4 tbsp. Flour
1-1/2 cups turkey or chicken broth
1-1/2 cups heavy cream
1/2 tsp. Salt
Freshly ground pepper
3/4 tsp. Rosemary
Juice of one lemon
3 to 4 cups leftover turkey, cut into strips

Directions:

Heat butter in a large saucepan and sauté the onion until softened. Add the mushrooms and sauté 2 minutes. Add the flour and cook, stirring 1 minute. Add the broth and cream gradually, stirring constantly until the sauce thickens. Stir in the salt, pepper, rosemary, lemon juice and turkey and simmer 5 minutes.

Serve over rice. Delicious!

I usually make this, of course, the day after Thanksgiving with the turkey you don't know what to do with. My sister, Marie, has been known to come out in a blizzard for it! This recipe was given to me by my sister-in-law, Lucy. I hope you like it as much we do!
