2-4-6 potatoes - large Russet Potatoes that look like Mr. Potato Head
Olive oil to coat
Kosher or sea salt

Scrub potatoes with a brush until clean. Dry potatoes. Preheat at 350º (I go to 375º- convection roast). Using a standard fork, poke 8-12 deep holes all over the potatoes. Rub lightly with olive or canola oil. Sprinkle with kosher salt and place directly on the rack in the middle of the oven. NOTE: I put on a foil lined half-cookie sheet). Put in oven probe - max register is 210 - should go to 215. Cook until timer goes off at 210 degrees, then cook about 15-20 minutes longer. The skin should feel crisp, but the flesh beneath should be soft. There will be some steam.
