2 T butter
1 T olive oil
4 shallots, sliced
2 garlic cloves, sliced
6 sage leaves, torn
1/4 cup dry white wine
1 1/2 cups heavy cream
1T fresh lemon juice
1/4 tsp fresh grated nutmeg
2 T truffle oil
1 cup coarse grated extra-sharp cheddar cheese
1 1/4 cups freshly grated Parmesan
1 16 oz box orzo, cooked
Salt & pepper to taste
1/1/4 cups fresh bread crumbs

1. Preheat oven to 375ºF. Heat the butter and olive oil in a large saucepan over medium-low heat. Add the shallots and garlic and sauté for 2 minutes, then add the sage and wine; cook for 2 minutes more.
2. Increase the heat to medium-high and add the cream, stirring constantly, until it comes to a boil. Reduce heat to low for about 5 minutes, still stirring.
3. Remove from heat. Stir in the lemon juice, nutmeg, truffle oil, cheddar cheese, and 1 cup of the Parmesan. Mix with Orzo; season with salt and pepper.
4. Divide the mixture into eight ramekins, or put into casserole dish. Mix bread crumbs with remaining 1/4 cup Parmesan and sprinkle over top of pasta.
5. Bake until bubbling and lightly browned, about 20 minutes.

Olive oil may be substituted for truffle oil. Whatever you can afford is probably artificially flavored olive oil anyhow. The flavoring enhances the dish but it really only needs the olive oil to achieve the right consistency for mixing the cheese, cream and vegetables.
