80 Ritz crackers,crumbled
1 1/2 stick margarine,melted

Filling
1/2 gal, vanilla ice cream;put in large bowl and melt.
4 small pkg. instant coconut cream pudding
1 1/2 cup milk

4 additional Ritz crackers, crushed, for topping
or shredded coconut

Combine crackers and melted margarine and press into long cake pan

Filling
Mix ingredients thoroughly then pour into crust. Put cool whip on top. Crush additional Ritz crackers or use coconut for garnish on top.

Another old friend, Betty Covino,added this recipe to my bridal shower cookbook. It is easy and delcious. Betty and her husband Al currently live in Graystone, where my mom resided before moving to The Chateau at Golden Living (Hillview), Betty and Al were party and golf friends of both of my parents, who met at St. Rose. Betty and I continue to battle furiously every day playing Words WIth Friends. She is a worthy contender.
