2 packages (6 oz. each) chocolate chips
2 tbsp. vegetable shortening
12 cupcake papers
2 envelopes unflavored gelatin
1 cup water
1/3 cup sugar
1/2 cup crème de menthe
2 egg yolks
1 cup (1/2 pt.) heavy cream, whipped
2 egg whites stiffly beaten
Green food coloring

Directions:
Directions:
In a saucepan over very low heat, combine chocolae chips and shortening. Stir gently until mixture is smooth and melted. Place cupcake papers into muffin pans. Divide chocolate mixture equally among cupcape papers. With the back of a spoon spread the chocolate evenly in cupcake paper. Chill. In a saucepan, mix gelatin, water and sugar. Stir over low heat until gelatin is disssolved. Stir in creme de menthe and egg yolks. Chill until syrupy. Fold in whipped cream and egg whites. Add green food coloring. If desired. Spoon mixture into chocolate cups. Chill until firm. Carefully strip off the cupcake papers before serving. Spoon cusard or fudge sauce over each serving. Garnish with chopped pecans, (If desired, 1/2 cup clear corn syrup and 2 tsp. peppermint extract can be substituted for creme de menthe.)
