4 cups all-purpose flour
1 1/2 cups (3 sticks) unsalted butter (softened)
1 cup sugar
1 large egg
2 1/2 tsp lemon extract
1 tsp vanilla extract
1/2 tsp salt

1 lb powdered sugar
milk to desired frosting consistency
1/2 tsp lemon extract
1/2 tsp vanilla extract

Directions:

1. Beat butter and sugar in a large bowl until fluffy. Beat in egg, lemon and vanilla extracts, and salt. With mixer on low speed, beat in flour in 2 additions until blended. Divide dough into thirds and wrap in plastic wrap. Refrigerate until firm enough to roll out, about 2 hours.

2. Preheat oven to 350º. Roll one piece of dough at a time. I roll between 2 sheets of parchment paper (less sticking to the rolling pin), or you roll on a lightly floured surface with a floured rolling pin. Roll to 1/4" thickness. Cut out desired shapes with cookie cutters; re-roll scraps. Place 1 1/2 inches apart on parchment lined cookie sheets. Bake 12 to 15 minutes, or until the surface looks dry (not brown). Let cool.

3. Frosting: mix a pound of powdered sugar with enough milk for desired consistency. Less milk for spreading, a bit more for dipping or piping. Mix. Add the lemon and vanilla extract and mix again. For multiple colors, divide and add food coloring. Or use just one color.
