6-8 bone in Chicken legs and thighs
3 leeks, sliced, white and pale green parts
1 28 oz can diced tomatoes
1 pepper chopped
1/2 tsp dried thyme
1/2 c white wine
oil
Salt to taste

Directions:
Directions:
Heat oven to 350º
In dutch oven, heat 2 tsp of oil on medium high heat. Brown chicken on all sides; remove from pot. Add peppers and leeks and 1/2 tsp salt and cook for 2-3 minutes. Add wine and scrape up any browned bits. Add tomatoes, thyme and chicken. Cover and put in the oven for 30-45 minutes or until done.
Serve over rice.
