16 - 20 japalenos (depends on degree of heat)
1/2 cups white vinegar
1/2 cups water
2 T salt
2 cups sugar
1/2 cup flour
1 T ground turmeric
1 T dry mustard
1 16-oz jar yellow mustard

Directions:
Cut the jalapenos into halves. Remove seeds and membrane. Chop jalapenos finely to yield about 4 cups.
Combine jalapenos, vinegar, water, and salt in a large saucepan. Simmer over medium heat until jalapenos are tender, about 8 minutes.
Add some of the jalapeno seeds if needed for heat.
Combine sugar, flour, turmeric and dry mustard in a medium bowl and mix well. Stir in yellow mustard.
Add the mustard mixture to the jalapeno mixture and mix well. Simmer, stirring frequently, until thickened, about 5 minutes.
Spoon into hot 1/2 pint or pint jars. Place lids on to seal. Process in hot water bath for 5 minutes.
