Ingredients: Veggie or corn oil + 2 T - 2 turns of the pot in slow stream 1 c. frozen corn 1 red pepper, split and seeded 1 pound chicken breast (skinless/boneless) 1 t. poultry seasoning 1 t. cumin salt and pepper 1 sm to med zucchini, small dice 1 med yellow onion, diced 3 T. diced green chiles 3 cloves of garlic, chopped 1 to 2 chipotle in adobo peppers (med to hot level), chopped - available in the Mexican/Spanish section of your grocers 1 can diced tomatoes with green chilies 1 can of tomato sauce - 8 oz. 3 c.of chicken stock (available in grocery store) 4 c. blue corn tortilla chips, broken into large pieces 1 to 2 c. shredded cheddar or pepper jack cheese 1/2 c. sour cream
Optional garnishes - 1/4 red raw onion 2 to 3 T. chopped cilantro 1 ripe avocado, diced with 1/2 lemon juice squeezed over it.

Directions:Heat a grill pan on high and a soup pot to med high. Drizzle oil on corn and sauté. Char the rest of the vegetable 10 minutes total turning occasionally. Remove to cool, 5 mins. Remove charred skin from the pepper.
While the veggies cook, dice the chicken. Add 2 T. oil to the hot soup pot. Add chicken to pot. Season with poultry seasoning, cumin, salt and pepper. Lightly brown the chicken on each side. Add zucchini, onions, garlic and chipotle peppers. Cook veggies with chicken 5 to 7 mins to soften. Add green chilies, tomatoes, tomato sauce and stock. Bring soup to a bubble, reduce heat to medium low.
Add corn and diced pepper into the soup. Add broken chips on top with lots of cheese! |

Notes: This is a Bonsal Family favorite! It's gotten to the point my husband and kids just say "Soup" in a sing-song voice and I know what they want for dinner! When I cook soup I often choose to add extra ingredients to stretch the soup or simply because it sounds good. It's a great idea to make a recipe the way it is written once, and the second time try playing around with ingredients or spices, thus putting on that "Mandy Twist" on every recipe! Make sure you jot down notes in the your book for next time!
