2 cans LeSeur green peas - drained
2 cans French cut green beans - drained
1 green (or orange) pepper
1 medium onion chopped
1 cup of celery chopped
1/2 cup sliced ripe olives
1 cup sliced mushrooms
1/2 cup sugar
1/2 cup white balsamic vinegar
1/2 cup olive oil (I use seasoned oil such as "French Province")

Directions:
Directions:
Mix vegetables, olives , and mushrooms. Mix sugar, olive oil, vinegar, and vinegar with whisk. Pour over vegetables and mix gently. Marinate at least 8 hours and serve on individual lettuce leaves or bed of chopped lettuce. May be refrigerated and served for up to 5 days!

Traditional Family Recipe Aunt Bess brought this for every Christmas dinner when she came from Texas. I made a few modifications but the recipe is basically the same. I remember eating it for days! It does serve 24 hungry folks, and it is tart and nutritious! Love to all, Mimi
