Yellow mustard
Rub
Rufus Teague Rub
Cayenne Pepper
Garlic Salt Powder
Pepper
Paprika

Spray bottle
Cup apple juice
2 T Worcestershire sauce
2 T Butter
Water

Directions:
Directions:
Prepare ribs by removing membrane.
Spread a thin layer of mustard on the ribs.
Generously rub the Rufus Teague on all rib surfaces. Sprinkle remaining a spices on the ribs. Go lightly with any cayenne powder. Wrap ribs in Syran wrap and keep in fridge over night.

Ribs:
Start fire in side smoker. After the fire is burning well place one handful of wet wood chips (hickory, mesquite, apple or oak soaked for 3 hours) on the coals. We used apple wood. Place ribs bone side down on the oiled grill rack, close grill lid. Smoke for 2 1/2 hours at 250 degrees, occasionally spraying ribs with apple juice mixture to keep them from drying out and adding additional charcoal and wood chips. After 2 1/2 to 3 hours remove them and place on a double sheet of aluminum foil, spread the barbecue mixture over one side of ribs and spray with apple juice mixture. Cover the ribs with several layers of foil and return to the grill for another 40 minutes. Check for doneness by wiggling the rib bones to see if they pull loose easily. Serve with sauce.
