2 t paprika
1 1/2 t cumin
1 1/2 t oregano
1 t garlic powder
1/8 t red pepper flakes
1 1/2 lb boneless pork loin chops, cut into 1 in cubes
1 small green pepper, cut into 1 in pieces
1 small onion, cut into 8 wedges
8 lg fresh mushrooms
16 grape tomatoes
8 flour tortillas
3/4 c chunky salsa

Directions:
Directions:
In resealable bag, combine paprika, cumin, oregano, garlic powder and pepper flakes; add pork. Seal bag and toss to coat. On 8 skewers, alternately thread the pork, green pepper, onion, mushrooms and tomatoes and additional pork.
Grill kabobs, covered, over medium heat for 8 min on each side or till meat is no longer pink and vegetables are tender. Meat should be at 140 degree with meat thermometer. Place each kabob in a tortilla. Serve with salsa and cheese.
