1 Lg tomato, chopped
1 med onion, chopped
1 T minced fresh parsley
1 T olive oil
1 1/2 t paprika
1/2 t salt
1/4 t pepper
12 sea scallops (2 oz each)
Hot cooked rice

Directions:
Directions:
In an ungreased 3 qt baking dish, combine the first 7 ingrediens Bake uncovered at 400 degree for 10 min or until bubbly.
Stir in scallops. Bake an additional 15 min or until scallops are firm and opaque. Serve with rice.
