12 oz cream cheese
¾ c ricotta
12 tbsp. butter
5 tbsp. pine nuts
Pesto (store bought)

Blend cream cheese, butter & ricotta in food processor. Take store bought pesto (or homemade) & dry it out some w/paper towels. In a small round bowl, line with saran wrap. Layer 1 T pine nuts, then mixture of cream cheese/butter/ricotta, layer of pesto. Repeat (pine nuts, mixture, pesto) and then one final layer of mixture for the bottom. Refrigerate. Invert bowl and serve with crackers. Can be made ahead (better the next day)! Can also be frozen.

Love this because it makes a big ball and it is pretty. I can usually get 2 uses out of it. After the party, I re-mold into a ball what is left over and put it in the freezer for a dinner party appetizer in the future.
