Potatoes- 6 to 8 good sized russet - peeled & sliced thin, crosswise
Smoked meat (optional) but highly recommended cut into small pieces
Onion- peeled & roughly chopped
Garlic clove or 2 - sliced, diced,minced,smashed; just don't leave it out
Granulated beef bullion
Butter
Salt & pepper

In a hot #8 or #9 iron skillet 🍳 Throw in the smoked meat If it's bacon use 6 to 8 thick slices for sausage or pork hock about 3/4 cup Reduce heat to simmer Let that sweat a while with lid on while you peel & cut up potatoes, onion and garlic clove (about 20 minutes) turn up heat a bit then add potatoes Sauté that around for about 10 minutes on medium heat to render & give some color. Add onions ,garlic & about 2 teaspoons bullion granules. Salt & pepper. Cover & slow cook till potatoes are tender & falling apart.add butter if it gets dry (due to cooking to fast or from lifting lid to much) Turn up the heat & let it scorch. Stir from bottom so you scrape all that good scorched goodness Do that 2 to 3 times until it's the color you want. Serve with eggs over light & bacon.

Daddy always cooked this in an iron skillet on the creek bank or river over our campfire with the skillet resting on empty vegetable cans, bricks or just big rocks. I'm guessing that is how they got their name. Really good memories.
