Jambalaya Recipe

1 can diced tomatoes
1 can chicken or beef broth
6 oz can tomato paste
2 med green peppers chopped
1 med onion chopped
3 celery ribs chopped
5 garlic cloves minced
3 t parsley
2 t basil
1 1/2 t oregano
1/4 t salt
1/2 t cayenne pepper
1/2 t hot pepper sauce
1 lb boneless skinless chicken breasts, cut into 1 inch cubes
1 lb smoked sausage halved and cut into 1/4 in slices
1/2 lb uncooked med shrimp, peeled and deveined
Hot Cook Rice

In 5 quart slow cooker, combine the tomatoes, broth and tomato paste. Stir in the green peppers, onion, celery, garlic and seasonings. Stir in chicken and sausage.
Cover and cook on low for 4 hours or until chicken is tender. Stir in shrimp. Cover and cook 15 - 30 minutes longer or until shrimp turn pink. Serve with rice. Makes 11 servings.

Can cook on stove if stirfry chicken in oil first, and stir fry the sausage, onions, green peppers, and garlic in skillet. Then put rest of the ingredients into soup pot. Add chicken mixture. Heat till summer. Add cleaned shrimp and simmer till pink. Add cooked rice and serve.
