1 cup all purpose flour
1 cup yellow cornmeal
3 tsp baking powder
1/2 tsp salt
1/8 tsp freshly ground black pepper
1/8 tsp cayenne pepper
1 cup (lightly packed) grated or finely shredded sharp Cheddar cheese
1 egg
1 cup milk
4 T unsalted butter, melted and cooled slightly

1. Preheat oven 400º Butter a 12 2 1/2 inch muffin tin
2. Into a large bowl, sift together the flour, cornmeal, baking powder, salt, black pepper and cayenne. Add cheese and toss lightly.
3. In a small bowl, beat the egg lightly. Beat in the milk and butter. Pour this liquid into the dry ingredients and quickly stir 3-4 times around the bowl with a folding motion. Do not overtax; the batter should be lumpy. Spoon into the prepared muffin tin.
4. Bake for 20-22 minutes, until the muffins are golden brown and a tester inserted in the center comes out clean.
