6 medium red or waxy potatoes (1 1/2-2 pounds)
1/2 cup mayonnaise
1/4 cup sour cream
1 1/2 T red wine vinegar
1 tsp Dijon-style mustard
1/2 tsp salt
1/4 tsp freshly ground pepper
1 medium celery rib, chopped
1 small onion, finely chopped
1 hard cooked egg, coarsely chopped

Directions:

1. In a large saucepan of boiling water, cook the potatoes until tender, about 25 minutes.
2. Drain into a colander, rinse briefly under cold water and let drain for at least 10 minutes until cool enough to handle. Then peel off the skins and thickly slice the potatoes or cut into chunks if you prefer.
3. In a large bowl, combine the mayonnaise, sour cream, vinegar, mustard, salt and pepper. Stir to blend the dressing.
4. Add the celery, onion and potatoes and fold until vegetables are mixed and coated with the dressing. Add the egg and blend lightly.
5. Cover and refrigerate or chill in a cooler until serving time.
