3 pounds medium red potatoes
1/3 cup dry white wine
3 T red wine vinegar
1 1/2 T Dijon-style mustard
3/4 tsp salt
1/2 tsp freshly ground pepper
1/2 cup olive oil
3 medium shallots
Chopped parsley, for garnish

Directions:
Directions:
1. Boil potatoes in a large pot of boiling salted water until just tender, about 25 minutes; drain

2. As soon as the potatoes are cool enough to handle, peel them and cut into thin slices. In a medium-size bowl, toss the warm potatoes with wine.

3. In a small bowl, whisk the vinegar, mustard, salt and pepper until blended. Gradually whisk in the oil to make a thick vinaigrette.

4. Pour the dressing over the potatoes, add the shallots, and toss well. Garnish with parsley, if desired.
