1 c. white cornmeal
1 teaspoon Salt or more if needed
3/4 c. boiling water
2 tbsp. vegetable oil

Directions:
Directions:
Combine the cornmeal and salt in medium bowl. Stirring cornmeal mixture constantly with spoon, pour in boiling water in a slow stream and beat until smooth. Let stand a few minutes. Heat a large heavy skillet with oil until hot on a griddle or in a skillet on the stove.

For each pancake, drop 2 tablespoons cornmeal mixture into skillet of hot oil and pat into flat circles, about 4 inches in diameter. Cook pancakes about 2 minutes on each side or until golden brown, turning them with a wide spatula. If needed, add more oil to pan for remaining pancakes. Serve hot at once.

In the pioneer days, Hoe cakes were cooked in the fire place, on hot coals, or on a "hot hoe/shovel" in the fireplace. Hence the name of Hoe Cakes!

Cornmeal pancakes or Hoe Cakes were a treat when I was growing up. My mother, had these mastered! They were always thin, crunchy and very quick to prepare! I must say I could not make them as well as my mother!

(I have had these prepared with what I think was a hushpuppy mix instead of cornmeal. Delicious!)
