Ingredients: 1 c. white cornmeal 1 teaspoon Salt or more if needed 3/4 c. boiling water 2 tbsp. vegetable oil

Directions:Combine the cornmeal and salt in medium bowl. Stirring cornmeal mixture constantly with spoon, pour in boiling water in a slow stream and beat until smooth. Let stand a few minutes. Heat a large heavy skillet with oil until hot on a griddle or in a skillet on the stove.
For each pancake, drop 2 tablespoons cornmeal mixture into skillet of hot oil and pat into flat circles, about 4 inches in diameter. Cook pancakes about 2 minutes on each side or until golden brown, turning them with a wide spatula. If needed, add more oil to pan for remaining pancakes. Serve hot at once. |

Notes: In the pioneer days, Hoe cakes were cooked in the fire place, on hot coals, or on a "hot hoe/shovel" in the fireplace. Hence the name of Hoe Cakes!
Cornmeal pancakes or Hoe Cakes were a treat when I was growing up. My mother, had these mastered! They were always thin, crunchy and very quick to prepare! I must say I could not make them as well as my mother!
(I have had these prepared with what I think was a hushpuppy mix instead of cornmeal. Delicious!)
