1/2 lb sliced bacon, chopped
4&1/2 c. milk
1&1/2 tsp. salt
1/4 tsp. cayenne pepper
1 tbsp. unsalted butter
2 c. quick-cooking white grits
1 c. grated cheddar cheese

Directions:
Directions:
Fry the bacon in medium saute pan over medium-high heat. Fry bacon until crispy then drain on paper towels. In a medium saucepan combine the milk, salt, cayenne pepper, butter and bring to a broil. Add the grits and reduce the heat to medium. Stir 30 seconds, then add the cheese and stir until the cheese melts. Stir in the bacon. Cook, uncovered for 4 to 5 minutes, until the grits are tender and creamy. Serve HOT!
