1 cup flour*
2 tbsp sugar
1/8 tsp salt
½ cup butter or margarine, softened
1 can (1lb. 5 oz.) Cornstalk Cherry Pie Filling

Cheesecake Topping:
2 pkg (3 oz. each) cream cheese
1 egg
1/3 cup sugar
½ tsp vanilla


Directions:
Directions:
Preheat oven to 350º.

In small mixer bowl, combine flour, sugar, and salt. Cut in butter, using low speed of mixer, until mixture is crumbly. Press into bottom and sides of 9-inch pie plate. Pour cherry filling over crust. Spoon on cheesecake topping. Bake at 350º for 30 to 35 minutes until topping is firm. Chill thoroughly before serving.

Cheesecake topping: In small mixer bowl, combine all ingredients. Beat at high speed until well blended.

*For use with Self-Rising Flour, omit salt in crust.
