Meatball:
2 tbsp. Cornstarch
2 Large Eggs
1/4 c. Minced Fresh Chives
3 tbsp. Bread Crumbs
3 tbsp. Hoisin Sauce
4 tsp. Minced Gingerroot
3 Minced Garlic Cloves
1/2 tsp Crushed Red Pepper Flakes
3/4 lb. Ground Beef
1/2 lb. Ground Pork
2 tbsp. Oil Divided

Sauce:
1/2 c. Red Currant Jelly
1/2 c. Hoisin Sauce
2 tbsp. Mirin (sweet rice wine)
3 Minced Garlic Cloves
1 1/2 tsp. Thai Red Chili Paste

Wraps:
36 Bibb or Boston Lettuce Leaves

Directions:
Directions:
Place cornstarch in a shallow bowl. In a large bowl combine next seven ingredients. Add beef and pork. Mix. Shape into 1 in. balls, coat with cornstarch.

In a large skillet heat 2 tbsp. oil over medium heat. Brown balls in batches, adding more oil if needed. Remove and drain.

Add sauce ingredients to skillet. Cook and stir over medium heat until blended. Return meatballs to pan, bring to bowl. Reduce heat simmer uncovered for 5-8 min. Serve meatballs in lettuce leaves.
