1 bunch fresh broccoli ( 3 stalks)
1/2 medium red onion, cut into thin rings, then in half
1/2 cup golden raisins
1/2 cup spanish peanuts or cashews
Dressing
1/4-1/3 cup sugar
1 cup mayonnaise OR 3 Tbsp wine vinegar OR plain yogurt OR lemon juice
(optional-- 1 cup shredded cheddar cheese or chopped cooked bacon )

Directions:

Cut the florets off the tops of broccoli stalks. Separate the florets into small pieces. Peel the tender top half of the stalks and slice diagonally, thinly.
Put these into a large sealable container and add the onions, nuts, and raisins. Add either of the optional items, as you wish. I especially like the bacon.
Mix the dressing together well, then stir into the other ingredients.

Seal and refrigerate fora few hours before serving. This keeps 2-3 days in refrigerator and leftovers make a good snack.
