1 (2.5 pound) package cleaned calamari, rinsed
1 1/2 c all-purpose flour
3/4 tsp salt
1 1/2 tsp dried oregano
1 1/2 tsp paprika
1/2 tsp pepper
vegetable oil

Directions:
Directions:
1. Cut calamari tubes into 1/4-inch thick rings. Soak calamari in cold water 30 minutes; drain. Pat dry with paper towels.
2. Combine flour, salt, oregano, paprika, and pepper. Dredge calamari in flour mixture.
3. Pour oil to a depth of 6 inches into a Dutch oven. Heat at 400º. Fry calamari in batches, 1 minute, allowing the oil to reach 400º before cooking next batch. Drain on paper towels. Serve immediately.
