1 (6.2 oz.) package fast-cooking long-grain and wild rice mix
1/2 c butter
1 small onion, chopped
1/4 c all-purpose flour
1 1/2 c chicken broth
3 c chopped cooked chicken
1 1/2 c half and half
1 (6 oz) can sliced water chestnuts, drained
1 (4.5 oz) jar sliced mushrooms, drained
1 tbsp chopped parsley
1 tsp salt
1/2 tsp pepper
1 (2.5 oz) package sliced almonds

1. Cook rice according to package; set aside
2. Melt butter in a Dutch oven over medium-high heat. Add onion, and saute until tender. Add flour, and cook, stirring constantly, 1 minute. Add broth, and cook, stirring constantly, 1-2 minutes or until mixture is thickened and bubbly.
3. Stir in rice, chicken, and water chestnuts, mushrooms, parsley, salt, and pepper. Spoon into a lightly greased 11x7 inch baking dish. Top with almonds.
4. Bake at 350º for 15-20 minutes or until thoroughly heated.
