1 (1/4 oz) envelope active dry yeast
1/4 c warm water
2 1/2-3 c all-purpose flour
1/4 c sugar
1 1/4 tsp salt
2 large eggs, divided
1/4 c milk
1/4 c butter, softened
1 tbsp water
sesame or poppy seeds

1. Stir together yeast and 1/4 c water in 1 c measuring cup; let stand for 5 minutes
2. Pulse 1 c flour, sugar, and salt in food processor until blended. Add yeast mixture, 1 egg, and milk; pulse until blended. Add butter, 1 tbsp at a time, pulsing until combined. Gradually add enough of remaining flour until dough is no longer sticky.
3. Place dough in well-greased bowl
4. Cover and let rise in a warm place, free from drafts, 1 hour or until doubled in size. Punch dough down, and divide into fourths; shape each portion into 6 (1-inch) balls. Place on a lightly greased 13 x 9 in pan.

6. Stir together remaining egg and 1 tbsp water; brush over rolls and sprinkle with sesame seeds.
7. Bake at 375º for 15-20 minutes or until golden brown. Freeze up to 3 months, if desired.
