1 cup flour
2 eggs
1/2 cup milk
1/2 water
1/4 tsp salt
2 tab melted butter

Mix in a blender or whisk all together till smooth. Let sit 2 hours or overnite in refrigerator. Preheat a 6-9 inch crepe pan, or shallow fry pan on medium heat. Add 1/2 tsp (or so) to pan, let get hot, do not burn. Start with about 1/8th cup batter, pour into pan, tilt pan so batter covers bottom of pan, if not enough batter, just add to fill in gaps. When bottom slightly brown, turn crepe over, cook till slightly brown. This process should take less than 2 minutes. Repeat with remaining batter. Making crepes take practice so do not get frustrated, ( watch a U-Tube video). There are several variations for crepes, and you can fill them with anything.

Cooked crepes freeze well, make sure you have something between crepes so they do not stick together. Try different fillings, I have included some in this book. This is just a basic recipe. Have fun trying different ones. For dessert crepes, add 2 teaspoons vanilla , and 3 tablespoons sugar.
