2 carrots, diced (I use 1/2 lb. of small carrots)
1 onion, diced
2 cloves of garlic (2 tsp minced garlic)
1 lb. Italian sausage
Salt and pepper, to taste
1 Tbsp. Italian seasoning
1 can diced tomatoes
1 pkg. Hidden Valley dry ranch dressing
8-10 c. chicken broth
1 pkg. cheese filled tortellini (in the frozen section)
1 box fresh spinach
Parmesan cheese

Directions:
Directions:
Saute the onion, carrots and garlic in olive oil for a few minutes. Add the Italian sausage and cook until no longer pink. Salt and pepper to taste and add Italian seasoning. Add the can of diced tomatoes and dry ranch dressing mix. Stir and cook down for a minute, then add the broth. Bring this to a boil. Add the tortellini and cook until it is tender. Add the box of spinach and stir. Lower the heat to low and check for seasoning. Top your bowls of soup with parmesan. Serve with garlic toast.
