4 c Rhubarb
1 2/3 c sugar
1/4 c flour
2 eggs
1/4 t salt
1 t vanilla
2 T butter

Directions:
Directions:
Cut up rhubarb in 1 inch slices, Mix all the ingredients and place in pie plate sprinkle with sugar and cinnamon. Top with crust. Bake at 400º for 50-60 minutes.

Easy crust: 1 1/2 c flour, 2 T sugar, 1/2 c oil, 2 T milk, 1/2 t salt.
Topping Easy Crust: 3/4 c flour
1/2 c butter
1/2 t salt
1/2 c sugar
1 t or more cinnamon
