8-10 Graham Crackers or Digestive Cookies
1/4 cup butter, melted

Filling
3/4 cups cream cheese or mascarpone
1/2 cup greek yogurt
1/3 cup sugar (white or brown)
1 tbsp lemon juice
1 tsp vanilla
2 ripe peaches, thinly sliced

Directions:
Directions:
To make the crust, put the crackers or cookies into a small food processor and crush them into coarse crumbs. Pour them into a bowl, add the butter and mix until well blended. Press into the bottom and about an inch up the sides of a pie plate. Bake at 350 for 10 minutes, until pale golden. Set aside to cool.

In a medium bowl, beat the cream cheese (or mascarpone), greek yogurt, sugar, lemon juice and vanilla until creamy and smooth; spread over the crust. Top with sliced peaches and chill for half an hour or so if you have time - otherwise it can be served immediately.

Serves 6-8
