2 cups AP flour
2 cups sugar
1 tsp baking powder
1 tsp cinnamon
1 tsp salt
1 tsp baking soda
3 cups shredded carrots (1 lb bag)
1 cup vegetable oil
4 eggs
1/4 to 1/3 chopped nuts (i prefer walnuts)
Cream cheese frosting.
3 oz cream cheese
1/4 cup butter
1 tsp vanilla
2 cups powder sugar

Preheat oven to 325 (a must) Grease and flour a 9 x 13 pan. Wisk all dry ingredients, EXCEPT SUGAR, together. In a separate bowl stir together eggs and sugar, add vegetable oil, Mix well. Stir in flour mixture ( other dry ingredients) till blended. Add carrots, nuts if using, and gently mix. Pour into prepared pan, bake 50 - 60 minutes until tooth pick inserted in middle comes out clean. Let completely cool. Cream cheese frosting:blend cream cheese and butter together until mixed well. Add vanilla,blend, then slowly add powder sugar, (if you can sift powder sugar). Spread on top of cooled cake and top with nuts if desired..

Do not mix cake batter with a blender, do by hand.This can also be made into a 2 layer cake, or 12 cupcakes. Do not let anyone or beastie run, heavy walk or stomp by the oven for first 20 - 30 mins. This recipe was given to be by a friend, Susan, (not Alaska), who got it from her grandmother. I myself got this recipe in 1986. It was my dads favorite.
