1 1/2 cup water
1 cup white vinegar
1 6 oz can tomato paste
1/2 tablespoon dries mustard
2/3 cup brown sugar (packed)
1 teaspoon liquid smoke
1 medium onion finely diced
1/4 teaspoon garlic powder
1/2 teaspoon paprika

Add all except ribs to a pot, wisk well. Bring to a boil reduce heat and simmer until thick (not quite ketchup thickness) or reduced by about one third. Depending on heat and cook this can take up to 2 hours, (well it has for me). Let cool. Prepare ribs by rinsing in cold water and pat dry. Cut into pieces or leave as racks. Coat in a layer of the sauce, put in a baking pan or pans, I prefer the glass ones. Cover tightly with foil, sealing the edges of pan as best you can. Bake at 250 to 300 f for 2-3 hours, depending on temp. When meat starts to pull back from end of bones they are done. When ready grill ribs and baste with sauce as desired until ribs start to char. Serve with sauce on the side.

Can prepare up to 2 days ahead before grilling. Sauce freezes great. Serve with Bridgets green beans and rice.
