4 salmon fillets or a 1 pound piece of salmon, skin on one side
•3 tbsp dijon mustard
•16 crackers, crushed

Directions:
Directions:
1.Coat the dutch oven with a non-stick cooking spray. Place salmon fillet, skin side down in prepared dutch oven.
2.Spread mustard evenly over fish. Sprinkle with crushed cracker crumbs.
3.Add a little dill weed or lemon pepper if so desired.
4.Bake at 400 degrees for 15-20 minutes
