2 cups flour
1 tsp salt, stirred into flour
3/4 cup Crisco, cut in slices into flour.
Mix this together, ten add
1/3 cup plus 1 Tablespoon ice water

Either use a mixer on low speed for about 20-30 seconds to form a smooth ball,
Or— cut the flour, salt and crisco together with a pastry blender by hand, then add the ice water and mix with a fork until you can
form a smooth ball and all the flour incorporated.. ADD WATER IF NEEDED.
This is how I do it.
Separate into two equal sized FAT discs, put sheet of waxed paper between, and chill for one hour in fridge before rolling each
out.to about a 10inch circle for a 9 in pie pan and loosely put bottom crust in the pan,
having it hang-over the rim. Add pie filling, then carefully lay top crust over and pinching the edges together, make a fluted edge
with your pinched fingers. Cut holes in top to let steam out, or use lattice top.
Then bake pie as directed., in center of oven. Watch that the edges don’t get too brown.
If you need a baked bottom crust for a pie, flute the edge, then prick all over the crust with a fork and bake in 425 oven about 10-
12 minutes. Check to make sure it does not get too brown.
