7-8 Large Eggs
1/8 Cup Milk (Almond Milk can be substituted)
2-3 Cloves Chopped Garlic
8 Oz. Frozen Spinach (thawed and drained)
1 or 2 (4 Oz.) Cans Chopped Mushrooms (drained)
1/4 Cup Feta Cheese (optional)
Italian Seasoning to Taste
Salt to Taste
Pepper to Taste

Directions:

Preheat oven to 350º F.

In a glass baking dish, beat eggs and milk. Mix in garlic, Italian seasoning, salt, pepper and feta cheese; blend well. Add mushrooms and spinach and mix well.
Place in oven and bake, uncovered, for 45-50 minutes or until top is set and golden brown.
